[interchange-cvs] Field selections for customer edit pages

Hi all -

I know, long time no hear on this list. I am working on changing that, 
starting now. In the meantime, could someone in the know please enlighten 
me as to the mechanism which selects which fields show up on which edit 
screens (Shipping, Billing, Preferences, etc) in the Customer Admin area? 
This used to be controlled by the mv_metadata for the table, but that does 
not seem to be the case anymore, and the other likely suspects (i.e.: 
ui_data_fields) also seem to have little to do with what's on these pages.
