Dan.. I tried this.  I wanted to rename mine also. Having some trouble.
I have done everything above with the exception of editing catalog.cfg.
There are no absolute paths in this file!  I'm using 4.7.4.  Installed
as root. home dir=/home/interch/catalogs/...  I copied the
dir foundation to store and moved the foundation dir to foundation.old.
Copied /cgi-bin/foundation to /cgi-bin/store with chmod 4755 interch.
Copied the foundation line in interchange.cfg to store and edited it
proper.  su'd to interch and restarted the interchange server.

I have also tried variations of the above.

The splash screen comes up as /store/index.html, but both the customer
and admin links refer to /cgi-bin/foundation....  going directly to
/cgi-bin/store/index.html gives the store screen and all the text and
images are correct... but all links refer to /cgi-bin/foundation/...

[long breathe] what's next?
