Okay, this took me longer than it should have done to figure out, so I thought 
I'd post this message to the list in the hope that somebody in my situation 
might find it useful in future:

To add an additional product field and make it appear in the "Item edit" page 
of the Interchange Admin user interface (UI), do the following:

*  add the column to the "products" table
*  Edit the "mv_metadata" table
*  Add another entry for your field (products::yourfield)
*  Edit the "products" record and add yourfield to the list of fields already 
there (it should appear in the list)

It was the last step that had me stumped for a little while!  Maybe there 
should be a "newbie FAQ" section in the Wiki?

The docs seem to be down at the moment, BTW.
