 FreeBSD is pretty good. I use it for my production server and you can install 
Interchange with all its dependencies straight from the ports collection that 
comes with the OS. It's compatible with all the bits and pieces you'll want 
for "Interchange with all the trimmings".

 FreeBSD 4.8 is the most recent stable version. 

 I haven't tried Interchange in Linux yet, but I think that's the platform 
it's developed on, so one would think it's also an option.
