You can set this in your main order Route in catalog.cfg, i.e.

Route main <<EOR
... (existing stuff)
         subject "Online store order %s"
EOR

...or by setting value mv_order_subject (at the top of etc/log_transaction 
could be a good spot):

[value name=mv_order_subject set="Online store order %s" hide=1]
