I think you misunderstand.

I set testing as default in apt.conf:

  APT::Default-Release "testing";

and then add unstable to sources so I can selectively install from there 
using apt-get when required.

 From what I understand this like a simplified form of pinning. I may 
look at pinning later if my needs become more complex :)
