Yep, this is just standard option stuff.  Interchange can assign price
differentials to Simple or Matrix options so that (as in your example
above), the option for "Coach B" would have a price differential of +100
and so would be $100 more than Coach A.

Note: Your version of Interchange is vulnerable to a serious security
vulnerability whereby it is possible to get any data (including
usernames and passwords of your customers) from the database.  I highly
recommend upgrading to a newer version of Interchange as soon as
possible.  If you wish I can demonstrate the vulnerability to you in a
private email but will not attempt to exploit it without your consent.
