You will need to look into Interchange's "Order Routing" facilities.

If you set the "mv_order_route" variable for each product in the
basket then the specified route(s) will be followed when an order
is placed.  If your individual order routes are set up to send email
to specific warehouses then you should get what you need.  Each
product could have a route name associated with it, or you could
devise some other method of associating your products with your
warehouses.

The icdatabase manual contains information specific to order routing.
